Cider Sage Bread

Ingredients

1 Package (2 tsp) of active dry yeast

3 Tbsp Spiced Apple Cider Concentrate

1 1/4 Cup warm water

2 Cups bread flour

1/3 Cup melted butter

2 Tbsp sugar

1 Egg

2 Tbsp ground dry sage (or 1/4 cup fresh)

3/4 Tbsp salt

1 3/4 Cup all purpose flour

1 Tbsp olive oil

Dissolve the yeast in a large bowl with the spiced cider concentrate and warm water. Add the bread flour, butter, sugar, egg, sage and salt. mix together until fully incorporated. Add all-purpose flour a bit at a time until a firm dough forms. Knead the dough on a floured surface for 6-8 minutes or until smooth and elastic. Grease a bowl with olive oil and then add the dough (turning over to coat). Cover the bowl with plastic wrap and leave in a warm spot to rise until doubled in size. Once risen, punch the dough down and shape into a loaf. Place the dough in a greased 9×5 inch loaf pan and let it rise, covered with plastic wrap, for about an hour. While the dough is rising, preheat the oven to 400 degrees. Once risen, bake the loaf for 30-40 minutes until golden brown. Remove the loaf to a cooling rack and let it rest for 30 minutes.
